South Tyrolean cuisine has always been a
unique, winning combination of rustic traditional fare and light Mediterranean dishes such as pasta, pancakes, tuna steaks, "cozze", saltimbocca and speck. However, even this fascinating, very attractive mix is not enough for our chef Elmar Frank and staff, who constantly come up with new creations such as trout filet with Tyrolean grey cheese and spinach leaves, or home-made calamari pasta with fresh lobster.
